A largely uninspiring first half saw Tottenham dominate possession over Stoke, but the North London side failed to translate this advantage into goals on the scoreboard.
Son came close after 23 minutes with a solo break past defender Martins Indi, but was halted by a superb save from Jack Butland.
Other opportunities for scoring in the first half came from Stoke's Pieters and Spurs' Eriksen, but both failed to materalise.
- Electric second half -
After the half-time break, both sides came back reenergised and produced a high intensity performance.
Eriksen continued his goalscoring prowess by scoring his fourth goal in as many matches, with an assist from Dele Alli after 52 minutes to put Tottenham a goal to the good.
Stoke then equalised with a Diouf goal that was a little unconventional. The striker charged into goalkeeper Hugo Lloris, taking an elbow to the face but managed to find the back of the net before collapsing.
Spurs wasted no time in getting ahead again, with a very light-touch header from Harry Kane giving the visitors a 2-1 lead they held on to until full-time.
The victory will be crucial for Tottenham in their attempt to cement a top-four finish in the Premier League.
